Tasmania's answer to Champagne, and it does not flinch from the comparison.
House of Arras grow their fruit in the coolest corners of Tasmania and hold this cuvée four years on tirage before disgorging. Pinot Noir leads, Chardonnay lifts. Gunflint and oyster shell on the nose, white stone fruit and grapefruit pith on the palate, and a bead so fine it is still rising long after the pour.
Very cold, in a proper glass, with something worth marking.
