An Australian aperitivo that tastes like where it is from.
Applewood make Økar in the Adelaide Hills, on a Vermentino wine base rather than a neutral spirit, which is why it drinks rounder and softer than the Italian bitters it sits beside. Native plum and rhubarb give it a dark, juicy middle. Strawberry gum lifts the finish into something faintly eucalypt. Bittersweet, but bright with it.
Pour it into a Negroni and the whole drink turns local. Or keep it simple: ice, a long splash of soda or sparkling wine, a slice of orange.

- Distilled and blended in Gumeracha, Adelaide Hills, South Australia
- Native plum, rhubarb and strawberry gum on a Vermentino wine base
- Serve over ice with soda or sparkling wine, or in place of Campari in a Negroni
- Store upright and out of direct sun. Refrigerate once opened.
Under liquor license laws this product must be purchased with flowers. The value of the liquor must not be more than 50% of the total gift value. Someone aged 18+ must be available to accept delivery.
